Hillside Honey Crispy Thai-ish Chicken Wings
INGREDIENTS

1 ½ lbs. Chicken Wings
Salt and Pepper
½ C. Honey
1 Tbsp. Soy Sauce2 Tbsp. Fish Sauce
3 Cloves Minced Garlic
2 Tbsp. Lime Juice
½ tsp. Red Pepper Flakes
½ tsp. Lime Zest
1 tsp. Sriracha Sauce
1 Tbsp. Pepper Jelly
2 tsp. Corn Starch
Sesame Seeds
Cilantro leaves
Oil for frying

DIRECTIONS

Season wings with salt and pepper and bake in preheated oven at 350 degrees for 40 minutes.  Drain fat and refrigerate overnight.

Combine honey, soy sauce, fish sauce, minced garlic, lime juice, red pepper flakes, lime zest, Sriracha sauce and pepper jelly in a pan.  Cook over low heat for 10 – 15 minutes until well combined.  Place ½ of sauce in a bowl, add the corn starch and mix well.  Add corn starch /sauce back in the pan with the rest of sauce and quickly bring to a boil over med.- high heat.  Reduce heat to low and simmer gently.

Quickly fry chicken wings in oil until crispy on the outside.  Toss with sauce.  You can season with salt and pepper, to taste and also garnish with sesame seeds and cilantro, if desired.
