Hillside Honey Citrus Salad with Avocado
3 Corn Tortillas (6 inch)
1/3 C. Honey
¼ C. Raspberry Vinegar
2 Tbsp. oil (Veg. or Canola)
¼ tsp. Salt
1 sliced Avocado
Preheat oven to 250 – 260 degrees. Slice tortillas into very thin strips and place on a cookie sheet. Bake for 15 minutes until dry and crispy. Set aside.
Peel oranges and grapefruits. Section, seed and place in large bowl. Set aside.
Whisk together in a small bowl honey, raspberry vinegar, oil and salt. Pour over citrus sections and toss. Top with avocado slices and tortilla strips.
